ITINERARY: a day in Merimbula, NSW

The heart of the stunning Sapphire Coast is undoubtedly the town of Merimbula, famous for their incredible fresh oysters farmed right on the edge of this bustling coastal village. With some of the best places to eat in the region, sparkling seaside views, incredible local seafood – Merimbula is a must-visit town.

So if you’re only planning a day here and intend to make the absolute most of it – this is my itinerary for the perfect day spent in Merimbula:

Wellness:

Starting the day off in the most stunning wellness space of Safir House. With a range of bespoke treatments - from the healing warmth of their state-of-the-art infrared saunas, to the invigorating chill of ice bath treatments, or the gentle, rhythmic lymphatic massage - this space truly will be your sanctuary on the Sapphire Coast.

Coffee:

Overlooking the water, Sunny’s Kiosk is a beautiful spot for your morning coffee. During the summer evenings, this space turns into a chic wine bar, but during the day all year around – grab a delicious breakfast, great coffee and even hire a boat to enjoy a spin around the lake.  

Oysters:

For the ultimate Merimbula activity, head out onto the pristine waters of Merimbula Lake for an unforgettable private oyster experience. Offered exclusively for Hillcrest Merimbula guests - take a punt ride to tour the oyster farms with award-winning local oyster farmer, James Wheeler. Wade through the rows as you’re guided through the process of farming Australia’s finest oysters, before shucking and enjoying fresh oysters right in the water with local sparkling wine to match. 

Lunch:

No visit to Merimbula is complete without a visit to Dulcie’s Cottage for their life-changing burgers. Add in a spicy margarita and this spot is unbeatable. Enjoy the roaring fire in the colder months, or sit outside under the jacaranda tree on a sunny day.

Stay:

Check in to Hillcrest Motel for the perfect blend of retro vibes with contemporary comforts. Perched overlooking Merimbula, this super fun motel has a tennis court, pool, and a sunny breakfast room/sunset bar with incredible oceans views to enjoy. Combining 70s charm with understated modern touches – this is a contemporary gem of a stay!

Drinks:

Time for drinks and more oysters - the incredibly chic wine bar – Bar Superette – is the perfect spot to enjoy amazing wines and unbelievably delicious snacks. Plus – they double as a bottle shop and providore so you can stock up on your favourite wines and charcuterie to take home. Absolutely not to be missed!

Dinner:

With super chic Mediterranean interiors and an incredible contemporary coastal menu (and killer wine list!) – Valentina is stunning. The whole experience is divine, I cannot recommend this place enough. Hot tip – the crab linguine is immaculate!
